EQUIPMENT
 Flat-Top Griddle or Cast Iron
 Metal Spatula
INGREDIENTS
1 Loaf Garlic Cheese Bread (or Texas Toast)
1-2 Onions (large) diced and grilled
 1-2 lbs Pastrami sliced thin
1-2 lbs Cajun Turkey (or deli meat of choice)
 1 tbsp Yellow Mustard
 1 tbsp Mayonnaise
 7-10 slices Dill Pickle
 2-4 cp. Shredded Cheddar Cheese
INSTRUCTIONS
1

Begin by cutting your own thick slices of the bread (or use pre-cut Texas Toast/thick cut bread of choice). Set your grill/skillet to a medium-high heat.

2

Add a small amount of cooking oil to you pan or griddle. Once the oil is hot, grill/Sautee onions until soft and set aside.

3

Grill both deli meats (separately). Pile the sliced meats onto one another into a stacked mound directly onto griddle/skillet. As the bottom slice begins to brown, use a metal spatula to begin cutting up the meats into small pieces (as desired). Continue to grill until all the meat is cooked thoroughly. Portion the meat per serving and set aside ( you can add shredded cheese on top of the cooked meat while it's still hot!).

4

Spread mayonnaise onto 8 sliced of the pre-cut bread. Grill (with mayonnaise side DOWN) until golden brown/toasted as desired. While grilling, add mayonnaise to the other side of each piece. Flip and grill until golden brown.

5

Begin assembling the sandwiches. While the final side of each slice of bread is still grilling, add one meat/cheese portion (of both pastrami and turkey) to the bread and add pickle, onions, mustard and more mayonnaise as desired. Top with final slice of bread.

6

Once assembled, grill for an additional five minutes and serve Hot!
