EQUIPMENT

INGREDIENTS
 2 cp. Sweet Potato
 1 ea. Pre-Made Pie Crust (refrigerated)
 2 ea. Eggs
 1/2 cp. Brown Sugar
 8 oz. Evaporated Milk
 2 tsp. Vanilla Extract
 1 tsp. Cinnamon
 1 tsp Nutmeg
 1/2 cp. Melted Butter
 1 bag Mini Marshmallows
INSTRUCTIONS

Pre-Heat oven to 350F.

Begin by boiling the yams in a large pot of water for about 50 minutes. After cooling, the sweet potatoes should be easy to peel.

Next, place the sweet potatoes into a mixer or mixing bowl. Blend well until the yams are smooth, then add the remaining ingredients (minus the marshmallows, which will be used last). Continue to blend until all ingredients are well incorporated. Sweet potatoes should be creamy and smooth. Set aside.

Line a pie pan of your choice with the store-bought pie crust, designing the edges as you see fit. Next, add the sweet potato filling to the pie crust and smooth well.

Arrange the marshmallows as desired (evenly) over the top of the pie filling. Bake at 350 degrees for 1 hour (be sure to check the browning of the marshmallows every 30 minutes, as ovens vary).

Allow to cool for about 30 minutes and serve as desired. Enjoy!
