EQUIPMENT

INGREDIENTS
 4 lbs Oxtails
 1 ½ cups All Purpose Flour seperate 1/2 cp from 1 cp
 2 tbsp Worcestershire sauce
 2 tbsp Kosher Salt
 1 tsp Fresh Ground Pepper
 ½ cup Vegetable Oil
 3 cups Beef Broth
 1 Yellow Onion Large, Roughly Chopped
 4 tsp Minced Garlic
 2 tsp Salt
 2 tsp Sweet Smokey Joe's Beef and Pork Rub or favorite creole seasoning
 2 tsp Onion Powder
 2 tsp Dried Thyme
INSTRUCTIONS

Begin by cleaning Oxtails with cold water and a capful of lemon juice. Remove access liquid with a paper towel.

Add "W" sauce and 1/2 cp. of reserved flour. Stir with wooden spoon to coat.

Begin heating vegetable oil in a large pan. Brown oxtails for 5-7 minutes on each side being sure to watch carefully. Remove browned oxtails from the pan and place into the bottom of a 7-Quart crockpot cooker.

In the same pan, slowly whisk in remaining 1 cup of flour. Continue to cook until flour begins to seize up and form a dough. Slowly whisk in the beef broth and continue whisking until well incorporated. Add in roughly chopped onions and transfer to Crockpot, pouring over the seared oxtails.

Cook on LOW for 4 hrs, or on HIGH for 8 hours. Serve with steamed rice or mashed potatoes and enjoy!
