
Begin by prepping the salmon; Chop your salmon into small chunks, then use a meat cleaver to break the salmon down further into you desired sized pieces. *Alternatively, canned salmon can be used in place of fresh*. Place salmon pieces into a bowl allow to chill for at least 1 hour.
Ina pan over medium heat sauté bell pepper, celery and onion and cook for 5 minutes to soften. Allow to cool briefly, then add this mixture to the pre-chopped salmon. Add remaining ingredients (seasonings, breadcrumbs and mayonnaise) and blend well. Place the salmon mixture back into the refrigerator for at least another hour.
Begin forming the patties to the desired sized. Wet hands with water or olive oil to prevent sticking. Once patties are formed, sprinkle each side with additional breadcrumbs.
