 6 Russet Potatoes, peeled and cut into thirds
 1 Yellow Onion, diced
 6 Hard Boiled Eggs, peeled
 3 Celery Stalks, diced
 1 cup Mayo of your choice
 1 tbsp Yellow Mustard
 1 cup Sweet Relish
 1 tsp Smoked Paprika
 Salt and Pepper to taste
 Creole Kick to taste

Boil your potatoes in a large pot.

In a separate bowl add in your mayo, mustard, relish, celery, boiled eggs (cut), and mix.

Once Potatoes are tender, add into the bowl with the mix, and mix gently. Salt and Pepper to taste.

Garnish with paprika and serve! Enjoy!
