
Begin by preheating the oven to 350 Degrees F. Prepare elbow macaroni as instructed and set aside.
Melt butter (or bacon grease) in a small pot over medium heat. Then begin sifting in the flour (small amount at a time) to create a thickening agent for the cheese sauce. Slowly add the milk and continue to whisk. Once the milk is fully incorporated, begin adding small handfuls of cheese (reserve 1/4 cup for topping) and melting them into the cheese sauce while continuing to whisk.
Butter an oven safe baking dish to prevent sticking and add the plain elbow noodles to the dish. begin slowly pouring the cheese sauce over the noodles, ensure every part of the dish has adequate cheese sauce. Stir well to blend.
Add reserve shredded cheese on top and bake, covered, for 30 minutes. Remove covering and return pan back to oven for additional 20 minutes to brown the cheese on top. Serve as a side or alone and enjoy!
