
Cut bacon into 1-inch pieces and place in skillet over medium heat. Cook for 5-7 minutes, until crisp.
Remove half of the fat from skillet and add in potatoes and peppers to skillet and cook for 8-10 minutes until potatoes are golden brown.
Now empty the bacon, potato and pepper mixture into the bowl and set aside and return skillet to stovetop.
Crack 4 eggs separately into skillet and let cook for about 1 minute, until egg whites set. Do not stir.
Carefully spoon the potato, pepper, and bacon mixture around the eggs. Add cheese and let cook for about 1 minute.
Remove skillet from heat, add in salt and pepper to taste. Add some fresh parsley and serve right out of skillet.
